Join us for an unforgettable culinary adventure of farm to table ingredients inspired by the vineyard. Start your journey under our star-shade tent where you will mingle with Winemaker Todd as you enjoy delectable hors d’oeuvres featuring handmade cuisine from Chef Joshua Day. Elevate the flavors even further with a tasting of Todd’s collection of limited production Signature Series wines, all included in your ticket price! Afterwards, make your way to the tables winding along the vineyard, where Chef Josh has put together an elegant butter tasting, a refreshing fall salad, and a duo of dinner entrees. Each course is paired with Hawk Haven wines selected by Winemaker Todd. Dessert, crafted with love by Hawk Haven’s resident baker Sue, is served under the star-shade tent with coffee and tea and a rare tasting of our 2008 White Port.
Chef Joshua Day
After attending Texas Culinary Academy Le Cordon Bleu, Josh worked in several New York City restaurants where he got most of his training and mentorship. His passion for creating things with food and love of bringing people together to eat is what fuels him in his dream to own a restaurant of his own. He loves cooking with seasonal vegetables and seafood, with the goal to emphasize a balance between good technique and maintaining the soul of the dish.
Todd Wuerker, Wine Maker
The youngest of three sons, Todd and his older brother Ken planted the first grapevines, Cabernet Sauvignon, in 1997 before he was even of the legal drinking age. He knew nothing of wine but his roots in farming and his dedication to learning more about winemaking resulted in a very knowledgeable individual who not only produces award-winning wines but also consults for other vineyards.

You will be invited back to the star shade tent for a rare tasting of the delicate 2008 White Port, alongside desserts crafted with love by our resident baker Sue Marleton
